Vegan tomato and mushroom pancakes


Ingredients:
Maida/all purpose flour – 140gms(1¼ cups)
Soya flour                       - 1 teaspoon
Soya milk                        - 400ml
Vegetable oil for frying
Topping/Curry:
Vegetable oil                    - 2 tablespoon
Button mushrooms        - 250 gms
Tomatoes(chopped)     - 250 gms
Soya milk                       - 2 tablespoon(for topping), more for curry
Pine nuts(chilgoze)      - large handful
Method:
·         Sift flour with a pinch of salt. Add in blender with soya milk and blend to a smooth batter.
·         On a non-stick pan, put oil, pour 3 tablespoons of batter. Flip and cook till golden brown.
·         For topping, heat the oil, cook mushrooms, tomatoes. Pour soya milk and pine nuts. For curry add more soya milk according to required consistency. Cook till all combined.
Serve pancake with topping or curry.
