Roasted vegetables salad



Ingredients: ( makes 2 bowls )
Green capsicum                - ½(chopped)
Red capsicum                    - ½ (chopped)
Onion (medium)               - 2(cut in cubes/long stripes)
Brinjal  (small)                  - 4 (semi-circles)
Boiled potatoes                  - 3(cut in pieces)
Zuchini                                -  ½ ( semi-circles)
Garlic                                  -  4 cloves
Olive oil                              - to coat vegetables
Black pepper
Salt


Ingredients for dressing:

Water                                -1 ½ tablespoon

Method:
·         Mix all the cut vegetables and add olive oil, salt and black pepper- mix nicely.

·         Keep it for 1-2 hours.
·         Grill or roast them in electric tandoor or OTG.

·         Mix all the ingredients of the dressing in a bowl. Garlic grilled can be crushed and added to the dressing.
·         Mix the dressing and grilled vegetables.
·         Add cut tomatoes can garnish with fresh parsley.
                         This is one of my favourite salad which I prefer to eat in my dinner. It is filling and  has amazing taste. It is indeed a mouth watering recipe. Do give it a try and give your comments.
