Mushrooms are edible fungus that can provide several important nutrients. The many kinds of mushroom have varying compositions and nutritional profiles. Today, let us talk about oyster mushrooms which have numerous benefits especially being low in calories and high in fiber.
Here is a quick look at why oyster mushrooms are so good for us.
Oyster mushrooms are:
Ø  Low in calories
Ø  Fat free
Ø  Cholesterol-free
Ø  Gluten-free
Ø  Very low in sodium
They are high in:
Ø  Protein and fiber
Ø  Iron, zinc, potassium, phosphorus and selenium
Ø  Vitamins B1, B3, B5 and B12
Ø  Vitamin C & vitamin D
Medicinal properties:
Ø  Cholesterol lowering
Ø  Anti-oxidant
Ø  Anti cancer
At times, it becomes difficult to get fresh mushrooms, so I got a very nice product - mushroom powder. It can be used as per your requirement. It can be used in your soups, curries, rice, pasta, noodles etc. It gives the dish a creamy texture along with being delicious and nutritious. 
I am giving the recipe for mushroom soup from mushroom powder which is easy to make, delicious and nutritious. Do give it a try and let me know your experience. One thing to be kept in mind is that mushroom powder should be cooked and cannot be used raw in any dish.
Oyster mushroom powder soup (4 cups)
·         Onion (chopped)                        - 2 medium
·         Garlic (chopped)                       - 4 cloves
·         Oyster mushroom powder     - 1 ½ tbsp
·         Pepper                                       - ½ tsp
·         Olive oil                                     - 1 ½ tbsp
·         Milk                                           - 1 cup
·         Vegetable stock                      - 2 cups
·         Water                              -  1 cup
·         Salt to taste
Method:
Heat oil in pan, add garlic, onion, sauté a little till onion turns pinkish, add oyster mushroom powder and roast for a minute. Add ½ cup water, boil and leave to cool down. Make puree in mixture and sieve. Add milk and vegetable stock along with salt and pepper. Adjust consistency with water. Simmer for 10 minutes. Garnish with cream and garlic bread.


Note: Vegetable stock can be replaced with chicken stock. Instead of stock, can use magic cubes.
